Is it just me or are ethnic cuisines more flavorful than our standard North American fare? There are exceptions, of course, and talented chefs are popping up like turkey thermometers here in the US. But I love the full flavors found in many foreign cuisines: Thai, Indian, Japanese, Chinese, and Mediterranean top the list. But sometimes it’s hard to find healthy ethnic food when eating out, especially when you’re looking for raw food options.
Today, I bring southwest China to you. Sensational Szechwan “Chiken” with Peanuts is as bold as it is healthy. Unlike the traditional stir fry, this recipe is vegan and 100 percent raw. Cauliflower florets replace chicken to boost nutrient content while providing a clean source of protein, along with the peanuts. I could go on about how good this dish is for you but your taste buds will dance with gratitude before your body does.
Sensational Szechwan “Chiken” with Peanuts
1½ cup cauliflower florets
1¼ cup carrot, thinly sliced
½ sweet potato
1 clove garlic, minced
1 tsp fresh ginger, minced
4 tsp olive or peanut oil
2 tsp Nama Shoyu
1 tsp chili powder
½ tsp raw apple cider vinegar
½ tsp raw agave
¼ cup raw peanuts
- In a large bowl stir together 2 tsp Nama Shoyu, 1 tsp oil, and chili powder. Add cauliflower florets and stir until florets are evenly coated. Set aside to marinate.
- In another bowl infuse the remaining oil with minced ginger and garlic (I use half of a clove). Add carrot slices and coat evenly. Set aside.
- With a zester shred unpeeled sweet potato into short rice-like pieces. Depending on your zester you may need to clear it frequently to prevent the pieces from clumping. For presentation purposes place directly in a rice dish or onto serveware.
- Combine carrot and cauliflower mixtures. Add vinegar, agave and peanuts. Stir thoroughly.
- Serve with sweet potato “rice” and chopsticks. Garnish with red pepper flakes if you wish.
Serves 2 … as long as those two share. Delish!!!

Hi, I like the way you use raw food as a way to help with your personal growth. I’ve always thought that within the personal development field and anything related to it would benefit from testing how raw food can enhance it.

Thanks for commenting. I think raw foods play a huge part in the health of our bodies, yes, but also the health of our minds. Switching to a raw food diet has improved every aspect of my life. It would be dishonest of me not to share my findings and enthusiasm.
